Rice and beans are a staple in Latin American households. It is a cost effective, but delicious meal that is sure to please a crowd and keep them stuffed.
What you’ll need for the beans
- 1 can of black beans
- 1 onion
- 1 bell pepper
- 2-3 tablespoons of ground cumin
- 2-3 tablespoons of dried oregano
- 1 tablespoon garlic powder
- salt
- pepper
- olive oil
- water
- lime (for garnish)
What you’ll need for the rice
- 1 cup of rice
- 2 cups of water
- juice of two limes
- cilantro to taste
- olive oil
Let’s get started!
- Rinse the rice. Add the rice, water, lime juice, and oil to a pot and bring to a boil. Once it begins boiling, place the lid on turn heat down to low. Let the rice simmer for 20-25 minutes.
- Finely dice the onion and pepper and then sauté in olive oil. Add the spices, except for the salt. Once the spices begin to turn fragrant add in the rinsed beans and enough fresh water to cover the beans by approx. 1 inch. Allow the beans to simmer for about 30 minutes, adding more water if necessary.
- Once the rice is done fluff up with a fork and then mix in your cilantro. Adding the cilantro now keeps the herbs fresh once served.
- When the black beans are nearly done, add salt to taste. Allow the beans to cool for about 10 minutes before serving. This allows the liquid to thicken more.
- Serve the beans on top of a bed of rice. Squeeze more lime juice over the top for garnish, and then enjoy!
